OIL-FREE VEGAN PESTO
Sunflower seeds for pine nuts
Arugula for basil
Kale for spinach
Wash and spin basil and spinach. If you are using mortar and pestle, pre-cut basil and spinach.
Ground the pine nuts and garlic first. Add basil and spinach in small batches and grind till the desired pesto texture.
You can make the pesto in a small food processor, throw all the ingredients into the processor and chop till the desired texture. You might need push the ingredients back down couple of times if they stick to the sides when making a small amount.
