Here is what we create when we crave some homemade chili but don't have hours and hours to spend on cooking. Our no cook chili recipe will win your heart and maybe even burn your tongue.

Even though this recipe is raw, our chili doesn't fall into the typical salad or smoothie bowl category!

Healthy, vibrant, and easy to make.

Should we talk about the most important part of the chili first, the meat? It's pretty easy to make vegan chili meat if you have access to a food processor. We used portobello mushrooms and lentil tempeh as a base. But to be honest, any kind of mushrooms and tempeh would lead the same result. 

The second important componet is the tomato sauce. To make it taste fresh and flavorful, we used tomatoes with a sweet and sour note. If you struggle to find seasonal tomatoes we suggest using a good quailty organic canned tomatoes or even a vegan tomato sauce!

The most chillaxed chili recipe ever.

As you probably know, you shouldn't eat uncooked beans. To stick to our no cook theme, we used fresh corn instead of using toxic raw beans. If you can't find fresh corn or the idea of biting on something juicy in your chili freaks you out, then grab some canned corn or baked beans, they will not spoil the chili a bit.

NO COOK CHILI BOWL


YIELD: 1 bowl

INGREDIENTS

FOR THE MEAT

  • 1 portobello mushroom
  • 1 cup tempeh
  • a dash of onion powder
  • a dash of chili powder
  • a dash of smoked salt

FOR THE TOMATO SAUCE

  • 2 cloves garlic
  • 2 1/2 cups tomatoes
  • 2 sun-dried tomatoes
  • 6 cilantro seeds
  • 5 green pepper seeds

ON TOP

  • 1 portobello mushroom
  • 1 lemon 
  • 3/4 cups fresh corn
  • 1 chili pepper

PREPARATION

1. Cut or rip portobello and tempeh in smaller pieces and place into a food processor fitted with an s-blade. Add the spices and process till it's broken down to meat like bits.

2. To a blender, add garlic, tomatoes, sun-dried tomatoes, and spices. Blend till combined and homogeneus.

3. Cut the second portobello in long stripes and sprinkle with the juice of half the lemon. Use the remaining half for decoration later.

4. Add the meat, tomato sauce, corn to a large bowl. Decorate with marinated mushrooms, lemon, and a de-seeded chili pepper.

 Keep the child pepper seeds and you will never make this chili again.


SUBSTITUTIONS

SMOKED SALT

We believe in the smoky flavor in our chili, but if you don't use smoked salt in your kitchen, use a drop or two of liquid smoke. You don't have liquid smoke? Why? 

FRESH CORN

Canned corn or baked beans are a great option.

FRESH TOMATOES

Canned tomatoes or vegan tomato sauce of any kind will do.
