Don't get us wrong, we love fancy food, eating fancy food at the restaurants, and watching fancy food prep videos on YouTube. However, most of us can agree that we simply don't have the time or money to prep complicated recipes every day. We have a solution for our "off" days... that makes us yell "kale yeah!"

Behold, our three kale sandwich ideas we can't wait to share with you. You can make them as a toast, as a sandwich or make a giant sandwich combining all 3 recipes.

We put the sauce on both slices. We think more is better. If you are taking your sandwich to school or work, put the sauce in between the dryer ingredients to keep the bread fresh and prevent it from getting soggy. Even better, bring the ingredients separately and put them together right before eating, it only takes 30 seconds.

SANDWICH 1

  • vegan pesto
  • tomato
  • avocado

SANDWICH 2

  • mustard
  • tofu
  • pickles

SANDWICH 3

  • vegan grease
  • toasted onion bits
  • vegan turkey

PREPARATION

Wash and spin the kale. You can use baby kale as it is. If your kale is more mature, you should remove the stems and rip it or cut it in smaller pieces. To soften the kale, massage it till it turns dark green.

SANDWICH 1

If you can't find vegan pesto, make your own. Just throw handful kale and basil into a food processor, add some pine nuts or sunflower seeds, 1/2 cup of olive oil and process till smooth.

SANDWICH 2

Sweet mustard is the best, you can use a lot of it to create a tangy base for your sandwich. Pickles can be easily replaced with cucumber.

SANDWICH 3

There are couple of vegan grease products out there, if you can't find one, just use vegan butter and add more of the toasted onion bits.

Any vegan deli sliced will be great in this sandwich. We used tuforky hickory smoked deli slices.
