A typical Greek salad is filled with onions, cucumbers, olives, ripe tomatoes, olive oil, and feta cheese. We took things a step further and created a veggie overloaded salad with a Plants Make Food twist! Of course we skipped the cheese and added loads of fresh olives and sun-dried tomatoes from the farmer's market. By the way, you haven't tasted a real olive until you've come to Athens! We're not talking about one of those pitted canned olives you get on your pizza. We're about talking days old olives that have so much flavor that you might forget about the pit and swallow it whole!

Our Athens Salad dressing includes a tasty blend of fig balsamic and tahini. When mixed together this combo creates a thick paste like consistency. Don't fret, just add some water and this fig balsamic and tahini forms a harmonious marriage!

ATHENS SALAD RECIPE

INGREDIENTS

SALAD MIXTURE

  • 1 ripe tomato, cut
  • 1 small cucumber, sliced
  • 1 bell pepper, sliced
  • 1/4 red onion, sliced
  • 1/2 cup olives, pitted
  • 1/4 cup sun-dried tomatoes
  • 3 handful mix greens

DRESSING

  • 1 tablespoon fig balsamic 
  • 2 tablespoons tahini
  • 3/4 cup water
  • a pinch of salt

PREPARATION

Combine all sliced vegetables, mixed greens, olives, and sun-dried tomatoes into a bowl.

For the salad dressing, mix tahini and fig balsamic into a paste.

Add water to thin the thickened dressing. Then add a pinch of salt for taste.

Pour salad dressing to the salad mixture. Toss salad until the dressing is evenly coated.

Grab a fork and enjoy!
